The vineyards are located on a sunny hillside with soils that are 60% clay-limestone and 40% of Triassic origin. Rich in calcium carbonate, magnesium and iron, the soil has distinct colours of ochre, yellow and violet.
Grapes are harvested by hand and crushed without destemming. Fermentation is at 15⁰C for 15 days. Fermentation is stopped by the addition of grape spirit to create a naturally sweet wine.
Is a delightful aperitif or pairs well with blue cheeses, chocolate desserts and fruits such as strawberries and melon.
