Grapes are grown on bush trained vines, averaging 40 years of age, growing in granite soils. Vineyard management is organic, certified by Haute Valeur Environnementale.
Grapes are picked and sorted by hand then whole bunches added to the vat. Carbonic maceration, the traditional Beaujolais method, is used so fermentation starts within the grapes, creating pressure which ruptures the fruit, releasing the juice. This process enhances the extraction of flavour and colour, whilst reducing the level of tannins.
Domaine de Colette is based in the village of Lantignie, 20kms north west of Villefranche-sur-Saone. Owner, Jacky Gaulthier inherited his uncle's estate in 1980 at the age of 17. At that time the Domaine produced Beaujolais Villages and wine from 2 of the Crus, Régnié and Morgon. Subsequently, Jacky purchased additional plots of vines in the Fleurie and Moulin-a-Vent Crus, to extend their range of Beaujolais wines.
