The Les Moriers vineyard is located on the top of a hill, adjacent to Moulin a Vent. Moriers are the Beaujolais equivalent of the Burgundy Murots, meaning small wall. The wall here was built to protect the vineyard from a small river that used to run near by. The vines have an average age of 60 years. The vines have established a very deep root system, giving them access to the granite sub strata which provides a mineral freshness to the wines.
Fermentation of whole bunches is split between stainless steel, concrete and wooden vats. The individual cuvées are blended in spring and allowed to mature together for 3 - 4 months before bottling.
Winemaker Cédric Chignard is the 4th generation of the Chignard family to run the business, having succeeded father Michel in 2006. Cédric spent time working in wineries in Alsace and Australia before joining the family business in 1998.
