The wine initially undergoes fermentation in vats, then is bottled before the fermentation process is complete. Fermentation continues in the bottle, resulting in a lightly sparkling wine.
Agnès Paquet's family have owned vineyards in Auxey-Duresses since the 1950's but had always leased them to other producers. In 2000, Agnès took over the vineyards and established her winery at Meloisey in the Côte-d'Or. She now owns 13 hectares of vineyards in the Hautes Côtes de Beaune, Auxey-Duresses, Pommard, Chassagne-Montrachet and St -Aubin 1er cru “les Perrières” appellations.
