The best grapes are sourced from a number of vineyard locations in the Hemel-en-Aarde district. 50% of the fruit is crushed as berries, the remainder whole bunches. This is the first year that the whole bunch proportion has increased, (from 30% in prior years,) and the resulting wine displays great structure and aging potential.
Fermentation is in stainless steel tanks, using natural yeast with the must left undisturbed to minimise extraction. The wine is aged in French oak barrels for around 12 months prior to bottling.
Crystallum was established in 2007, initially producing Sauvignon Blanc. The following year Chardonnay and Pinot Noir wines were also produced. They now produce Pinot Noir and Chardonnay exclusively and have also acquired their own vineyards around the Walker Bay area.
