After hand harvesting, the grapes are refrigerated for 24 hours. The grapes are de-stemmed then fermented on their skins for at least 2 days, before completing the fermentation in oak barrels. After fermentation the wine is allowed to rest on the lees for at least 7 months and is aged in bottle for 6 months before release. This is a serious wine with limited availability: only 3,200 bottles were produced!
About Azienda Agricola Cortese
Stefano and Marina Girelli acquired Azienda Agricola Cortese in July 2016. The vineyards and winery had been neglected for many years. The Girelli's initial plan was to completely replant the vineyards, but having taken ownership just before harvest time they decided to make some quick repairs to the winery and see what they could produce with the available grapes. They quickly realised that the mature vines had some unique clones, and they were really surprised by the quality of the grapes, despite the years of neglect.
The wines are organic and produced using traditional Sicilian grapes and wine making techniques.
