This is Pastore berliner weiss that has been aged for 6 months with a strain of wild yeast, brettanomyces claussenii. This variety of wild yeast produces fruity ester characteristics in the beer.
Father and son team Chris and Ben Shepherd run this Waterbeach, Cambridge based brewery producing fresh and aged sour and wild beers. Pastore is Italian for Shepherd, in recognition of the Italian heritage of the family.
