Palomino 100%
In contrast to the many bodegas around Jerez with long, long histories, Bodegas Forlong sold their first wines in 2014. Despite the short history, they are attracting very positive reviews for their natural approach and the quality of their wines!
Grapes are grown in the only certified organic vineyard in El Puerto de Santa Maria, one of the three sherry towns in Jerez. They also follow biodynamic principles and adopt natural methods in vineyard management. Ground cover crops beneath the vines suppress weeds, provide a habitat for insects that control pests and stress the vines by competing for nutrients during the growing season. With the vine prunings, the ground cover crops are returned to the soil to enhance nitrogen levels.
Grapes are harvested by hand at night, to maintain fresh flavours. On arrival at the winery, the grapes are chilled for 24 hours at 5⁰C, before hand sorting and destemming. During the pneumatic pressing process the grapes and must are blanketed in carbon dioxide to reduce oxidation. The juice is allowed to settle naturally before being decanted into used French Oak vats for fermentation. Once the fermentation process is complete, the vats are closed and the wine matures on the lees, with daily stirring to enhance texture and flavour.
In addition to their Palomino vineyards, Bodegas Forlong also have organic certified parcels of Pedro Ximinez, Tintilla Rota, Merlot and Syrah.
