This is seriously interesting sherry! It has not been produced using the traditional solera system but as a cabaceo, (blend,) of 4 vintages of unfortified Fino Barajuela wines: 2013 - 2016. The wines are blended in the tasting room in a similar way to the production of a non-vintage champagne.
Grapes are harvested from low yielding, 50 year old, Palomino vines in the Barajuela vineyard in the pago Carrascal. The vineyard soil is the renowned Barajuela albariza, with laminated layers of marl containing fossilised diatoms. This type of soil is very effective at retaining water to sustain the vines through the intense summer heat.
After harvesting the grapes are briefly sun dried, to concentrate sugars and eliminate the need for post fermentation fortification. Fermentation is in American oak casks with no racking. The wine is aged in casks that are filled almost to the top, which results in a much smaller layer of flor compared with a typical fino solera. This results in some of the fruit flavours of the wine being retained.
The wine is bottled en rama (unfiltered.)
Bodegas de la Riva is a historic Jerez brand that was acquired by Ramiro Ibáñez and Willy Pérez in 2017. They are returning to the traditional methods of manufacturing more individual wines adopted by the founder, Manuel Antonio de la Riva, who established the bodega in the late 19th century.
