A single vineyard wine, with grapes grown in Valtuille de Abajo, El Bierzo. The vineyard is located near to an ancient fountain which used to provide water for cattle, and now provides the name for this wine. The vines are over 100 years old and grapes are harvested by hand. Grapes are mostly destemmed, but a proportion are added as whole bunches. After crushing and a few days cold maceration, fermentation is spontaneous using natural yeasts. The wine is aged for 12 months in used 225 Litre oak barrels. The wine is decanted several times during this period so that it clears naturally and does not require filtration when bottled.
The vineyards have been owned by the Lopez family for several generations. Over the years they had primarily produced fruit to sell to other winemakers. In 2013 when Héctor and Víctor assumed control they decided to renovate an old winery that had been used by their grandfather and began producing their own wines.
