Colombard 50%; Ugni blanc 30%; Sauvignon Blanc 10%; Gros Manseng 10 %.

After destemming grapes are crushed and undergo a period of cold maceration. The juice is allowed a period of cold settling before temperature controlled fermentation. The wine is aged on the lees for 3 months before bottling.
