Chardonnay 70%, Tocai Friulano 13%, Sauvignon Blanc 8%, Pinot Grigio 5%, Muscat Ottonel 2% and Gewurztraminer 2%
A unique white blend based primarily on ten distinct clones of Chardonnay, plus five other varieties sourced from across their vineyard sites. Long Island lies on the same latitude as Southern Italy, but its strong ocean influence means winters are cool and wet, and summers are warm yet humid. Vineyards lie at sea level and are planted on a combination of loamy soils.
All the fruit was hand-harvested, the Chardonnay, Sauvignon Blanc and Tocai were whole cluster-pressed. The majority of the wine was fermented with wild yeasts and went through malolactic fermentation. Fermentation was in a mix of Slovenian and French oak puncheons, hogsheads and barrels of which 33% were new and 67% were neutral. The Gewürztraminer, Tocai, Pinot Grigio and Muscat were fermented on their skins and then blended back into the Chardonnay lot. The juice and wine were handled minimally, spending 12 months in barrel before bottling by gravity, without fining or filtration.
