Hunawihr is a picture postcard village with a 14th Century church and half timbered houses. Sheltered by the Vosges mountains, the slopes around the village are the sites of prime Alsace vineyards. The grapes for this wine are grown in vineyards with soils of clay, limestone, marl and chalk facing south - southeast, 250 - 320 meters above sea level.
Fermentation took place over 3 weeks in temperature controlled (16-18°C,) stainless steel tanks. Malolactic fermentation was blocked and the wine was aged for 4 months in stainless steel tanks before gentle filtration and bottling.
Cave de Hunawihr is a cooperative, established in 1954 to support the re-establishment of wine making in the region after the devastation caused by the 2nd World War. The cooperative has 110 members who own 200 hectares of vineyards, including Grand Cru sites, and a recently refurbished winery.
