Grapes are grown on volcanic soils on the slopes of Mount Etna. The grapes are harvested by hand, have a gentle pressing then are fermented on the skins at 27°C for 14 days. The wine is aged for 10 months in French oak barriques then for a further 6 months in bottle before release.
Cantine Paolini was established in 1964 in the Paolini district of Marsala in Western Sicily. It is now a cooperative for Sicilian grape growers with over 1,000 members.
