Sangiovese 85%; Cabernet Sauvignon 5%; Merlot 10%
Produced with grapes from sloping vineyards 400 - 450m above seal level, with soils high in clay and gravel. The grapes are harvested by hand and fermented in temperature controlled, stainless steel tanks. The maceration period is 15 - 20 days with regular pumping over, to aid extraction.
The wine is aged for 12 months before bottling, 70% in French Oak barrels (50% new,) the remainder in stainless steel.
Daniele and Carlo Cantalici established Cantine Cantalici in 1998, after years of working in local vineyards.
