Produced with grapes grown in vineyards on the plains around Manzanares in La Mancha. Some of the vineyards still grow bush vines, which offer a lower yield but more intense flavour in the grapes.
Grapes are destemmed then crushed, with the free run juice collected into chilled settling tanks. The clarified juice is transferred to stainless steel tanks for cool fermentation with selected yeast strains.This method of processing ensures the retention of the fresh fruit flavours, and prevents the introduction of phenolic compounds found in pressed juice. Bottled with minimal filtration.
