Produced with grapes grown in the Ca’ delle Vallade vineyard and the south west facing slopes of Monte Quarin: both areas with micro climates that are slightly cooler than the surrounding area, and ideally suited to chardonnay. Grapes from different areas are processed separately. After gentle pressing, the juice is fermented in French oak barrels. The wine undergoes malolactic fermentation and is aged for 9 months in oak barrels. Careful blending of the different fractions and numerous tastings are required before the final cuvee is developed. In the finest years a selected blend is produced and bottled as "Chardonnay Selezione."
