Pedro Ximénez 90%; Moscatel de AlejandrÍa 10%
The Pedro Ximénez grapes are grown on traditional Albariza soils in the Moriles Altos. The Moscatel de Alejandría is from slate soils in Axarquía, Málaga. In both locations, all the vineyard work is manual and no artificial pesticides or herbicides are applied.
The wine is fermented at a cool temperature in stainless steel then aged on the lees for 4 months. It is bottled with light filtration.
Bodegas Bentomiz is a boutique winery located high in the Malaga hills. This is a rugged landscape, with some of the vineyards on very steep slopes. The Sierra Tejada mountains to the north provide shelter whilst the area is cooled by breezes from the Mediterranean sea to the south. Winemaking uses a combination of modern and traditional techniques.
