Tabuérniga is a unique micro climate. Old bush vines grow on terraces in a horseshoe shaped site in an isolated, steep sided valley just outside the village of Labastida. The vineyard is 540 - 630 meters above sea level, with deep limestone / clay soils. Whilst the vines are predominantly Tempranillo, there are at least 12 other varieties, some of which have not yet been classified.
Grapes are harvested by hand then fermented in a mixture of 3,000 kg and 4,000kg open topped oak vats using natural yeasts. The wine is aged for 14 months in 1,500 litre oak foudres, before bottling without fining or filtration.
