This is the first white wine made in the province of Andalusia, more sprcifically - in the town of Sanlcar de Barrameda in the province of Cadiz.
Barbadillo Castle de San Diego is made from Palomino Fino, a grape variety that the winery grows in a specific indoor microclimate to achieve the best expression of the grape. It is harvested manually in mid-August, when it is at its peak of ripeness.
Once in the cellar, the free-run juice is obtained: juice obtained solely through gravity, without the addition of any additional weight. It is then fermented in stainless steel tanks for 10 days with native yeasts at a constant temperature of 17oC.
