Xinomavro 100%
Xinomavro means acidic and black in Greek. This traditional grape variety is found in northern Greece and its high acidity and tannin levels enables its wines to age and develop well.
Produced with grapes from vineyards on the south-eastern slopes of Mount Vermio in northern Greece. They range from 150 meters to 600 meters above seal level, with the upper vineyard areas in particular benefiting from cool breezes to moderate the hot summer weather. Soils are limestone / schist / granite.
After crushing, the grapes are macerated for 18 days before fermentation with native yeasts in stainless steel. The wine is aged for 6 months in old oak barrels, before bottling without filtration or fining.
Artisans Vignerons of Naoussa is a cooperative of small vineyard owners growing Xinomavaro grapes in a variety of locations throughout the hills of the Naoussa region. Their philosophy is sustainable viticulture and minimal intervention in the winemaking processes.
