Arras's Premium Cuvée sparkling wine is produced with selected fruit from the Pipers River, Derwent Valley and Tamar Valley on Tasmania's coast. The cool conditions combined with long days of sunshine ensure slow but consistent development of the fruit with a complex flavour profile. The wine is produced using the Charmat, tank method but the wine then undergoes 3 years aging in bottle on the lees before disgorgement and a further 6 months aging in bottle before release.
Ed Carr has been producing sparkling wine in Australia since 1986. He was one of the first winemakers to recognise the potential of Tasmania for producing world class sparkling wines and in 1995 established House of Arras to produce wines using exclusively Tasmanian grapes. House of Arras has received more awards for sparkling wine than any other Australian house. In 2018 Ed was granted a Lifetime Achievement Award at the Champagne and Sparkling Wine Championships, at the time the only non Champagne winemaker to receive the award.
