Negroamaro 80%; Malvasia 20%
Produced with grapes from 30 year old bush vines, growing in calcareous soils. The vines are pruned back to a height of just 40cms, to reduce the quantity and enhance the quality of the grapes produced.
Harvest, which is carried out by hand, is delayed as long as possible to ensure the grapes reach maximum ripeness. Fermentation and maceration take place in oak tanks. The wine is aged for 6 months in new 225 Litre French Oak barrels.
The Apollonio family have been producing wine in Puglia since the early 1900's. Now in the hands of the 4th generation, their wines reflect the character of Puglia and have contributed to the enhanced reputation of wines from this region.
