Grapes are grown on the shale - clay soils of Riebeeksrivier farm on the slopes of the Kasteelberg, overlooking Swartland. The Chenin Blanc vines are managed in the bush method, whilst the other varieties are trellised in the traditional Rhône style.
After hand harvesting at optimum ripeness, the grapes are transported to the winery in refrigerated trucks and pressed as whole bunches on arrival. The juice is allowed to settle overnight then transferred to stainless steel tanks and oak barrels for fermentation. The wine is aged for 8 months on the lees in stainless steel, (59%,) or French Oak barrels (9% new.) The wine is blended immediately before bottling.
Anthonij Rupert Wyne is based at L’Ormarins farm in Franschhoek. After Anthonij Rupert's death in 2001 his brother Johann took over the business and established Terra del Capo cellars on the farm. The new winery was equipped with state-of-the-art machinery, gravity-fed cellars and a mechanical flywheel - the only one of its kind on the continent.
