The wine is produced with fruit selected from small parcels within Dillons Point and Brookby Road. After pressing, the juice was clarified by cold settling. The Brookby Road juice was fermented in used French Barriques at 18°-22°C then aged on the full lees. The remaining grapes were fermented as parcel lots in stainless steel at 13°-15°C then racked and aged on the fine lees.
Australian Ant Moore moved to New Zealand in 2002 and has been making wines around Marlborough ever since. He has established vineyards in the Awatere, Waihopai and Wairau Valleys and produces wines that reflect the characteristics of individual vineyard terroirs and micro climates.
