Each variety is harvested by hand, at optimum ripeness, then fermented individually in new oak barrels, followed by 5 months of bâtonnage, (stirring the wine on the lees.) The individual varietal wines are blended before bottling.
Pairs well with complex salads, braised seafood and white fish and soft cheese.
Abel Mendoza has a number of vineyards in Alavesa, most lying in the foothills of the Sierra Cantabria. He makes use of natural, sustainable processes in the vineyard, focusing on the health of the vines and the soils. He has great knowledge of the soils in the different locations, and his objective is to produce wines that reflect the character of the grape and the terroir.
